It’s been a tradition in weddings that bride and her family ladies fix natural roses in their hair dress or keep a bunch of Jasmine's or any other flowers, What is the Islamic ruling in keeping these natural flowers and then throwing them off?

There is no harm in the tradition mentioned in the question, as it has not been forbidden. It is mentioned in Bahare Shariat:

“We cannot regard a tradition Haraam or impermissible, until its prohibition is established in the Shariah.”
